Apple Miso Almond Nut Butter Sandwich

apple miso almond butter sandwichThis Apple Miso Almond Nut Butter Sandwich is a new twist on peanut butter and jam sandwich! You can use any type of nut butter – cashew, soy, hazelnut. Miso is a salty paste made by cooking and fermenting soybeans and grains. Low in saturated fat, high in protein, it comes in various strengths and colours. The miso in this recipe, shiro miso, is pale yellow and all purpose. If pasteurized, refrigerate after opening. If unpasteurized, refrigerate when purchased.

Makes: 4-6 sandwiches

Ingredients:

½ cup apple butter
2 tsp shiro miso (golden or mellow)
⅓ cup smooth or crunchy almond nut butter
8-10 pieces whole grain bread

Method:

  1. In a small bowl stir apple butter and miso together.
  2. Spread apple butter – miso spread on one side of bread.
  3. Spread a layer of almond nut butter on second piece of bread.
  4. Put two pieces of bread together, slice in half or quarters.
