Lime Quinoa Salad

Quinoa resembles millet in appearance and texture. It has a very interesting food history and I hope it becomes a staple in your kitchen.

This lime quinoa salad is my favourite recipe to demonstrate how to use quinoa. It is a nutritional powerhouse and so easy to prepare. Make sure to rinse this grain for 5 minutes, using your hand or a spoon to swish it around.

Makes: 4 servings
Preparation Time: 20 minutes

Ingredients:

1 cup quinoa, well rinsed
1 carrot, grated
½ red pepper, finely diced
½ cup English cucumber, finely diced
2 green onions, finely chopped
1 can cannellini Beans, drained
¼ cup fresh coriander, finely chopped
¼ cup lime juice
3 tbsp toasted Sesame oil
¼ tsp salt

Method:

  1. Bring 2 cups water to a boil in saucepan. Add quinoa; reduce heat and simmer 15 minutes, stirring occasionally until grain is tender and water has been absorbed.
  2. Mix vegetables with quinoa and cannelloni beans. Whisk together lime juice, oil, salt and pepper to taste. Toss with vegetables, beans and quinoa.
  3. Serve salad an hour later or refrigerate fur up to 4 days. Just remember to toss it before you serve.
