Linguine Salad with Ginger & Garlic

This linguine salad with ginger & garlic is delicious hot or cold. Scent the pasta cooking water with dried herbs, it adds a lot of flavour.

Prep Time: 25 minutes
Makes: 6 servings

Ingredients:

1 tsp dried basil
½ tsp dried rosemary
½ tsp salt
8 oz linguine
½ cup arame
2 cloves garlic, minced
1 tsp minced fresh gingerroot
¼ cup rice vinegar
¼ cup toasted sesame oil
3 tbsp soy sauce
1 tsp hot pepper sauce
1 large sweet pepper, sliced
1 cup chopped green onions
1 carrot, grated
¼ cup toasted pine nuts

Method:

  1. Bring large pot of water to boil; add basil, rosemary and salt.
  2. Add linguine; cook until al dente (8 to 10 minutes for dry or 4 to 6 minutes for fresh). Drain.
  3. Meanwhile, soak arame in 1 cup cold water for 10 minutes; drain.
  4. In large bowl, whisk together garlic, ginger, vinegar, sesame oil, soy sauce and hot pepper sauce.
  5. Add warm pasta and toss to coat.
  6. Stir in red pepper, onions, carrot and arame.
  7. Sprinkle with pine nuts.
