Broccoli Black Bean Salad

broccoli Every natural foods pantry should have a few cans of black beans ready for use. I serve this fast, easy and delicious Broccoli Black Bean Salad with many main courses. It’s also a great addition to any picnic and to take camping.

Makes: 6 servings

Ingredients

3 cups blanched broccoli florets
1 zucchini, sliced
1 sweet red pepper, diced
1 small red onion, diced
1-14oz can black beans, drained and rinsed
3 tbsp olive oil
3 tbsp balsamic vinegar
1 tbsp Dijon mustard
1 tbsp chopped fresh dill
½ tsp salt
Pinch freshly ground black pepper

Method

  1. In large bowl, mix together broccoli, zucchini, red pepper, red onion and beans.
  2. In small bowl, whisk together oil, vinegar, mustard, dill, salt and pepper.
  3. Pour over salad and toss to combine.
